Why do coffee beans need to be roasted?

Coffee beans start out green and lack taste.
Roasting the beans enhances the flavor of the
coffee. Lightly roasted beans tend to taste
more like green "unroasted" beans. Darkly
roasted beans are more intensely flavored.
Coffee beans are roasted to release the
flavor and aroma of the coffee. Roasting of
beans also makes them easy to grind into powder.
