So, the first tip is to start with the freshest beans you can find -- at the very most two weeks old. Grind only what you need. Once you grind the beans, it releases the oils from the beans which contain most of the flavor. It is those oils that will give you the best flavor for your freshly brewed pot of coffee. Start with cold water, and use 2 tablespoons of freshly ground coffee for every 6 ounces of water (or 3/4 cup) in your filter. Then adjust to your liking. Make sure you use a clean pot. Mineral deposits from hard water add to the bitterness. Use white vinegar and water to clean your pot once a month or so, depending on the quality of your water. It helps to heat up and run a cycle of water only through your pot after using the vinegar.
