How long should a coffee percolator be left boiling for good coffee?

While making the coffee initially a percolator should boil anywhere from 1-8 minutes, depending on the amount of coffee being made to boil -- 1-2 minutes for small amounts, 3-8 minutes for a larger amount. Lesser boiling will not extract all the flavor and taste. Excessive boiling will destroy the taste and flavor of coffee.

After if has finished percolating the coffee is done, and now the percolator is only keeping the coffee warm. The coffee can be left in the pot for several hours, although I would not suggest leaving the house with a percolator plugged in. This could be a fire hazard. If you are there to keep an eye on the percolator the coffee can be in left in the perculator anywhere from 1-6 hours. However, keep in mind that the continued heat will break down the aroma until you end with a very poor, sour tasting coffee. It's best to use it within a few hours.
